Ingredients
- 600 g of salmon
- 160 g of macaroni
- 4 dl of fish stock
- 2 dl of double cream
- 100 g of frozen peas
- 60 ml of strong mustard
- 2.5 ml of ground white pepper
- 60 g of margarine
- 40 g of flour
- Parsley to decorate
Instructions
- Put the pepper into the flour and mix this to a smooth paste with the cream and mustard.
- Poach the fish in the stock and cook the macaroni in boiling salted water.
- Strain the fish, reserving the stock and, when cool, flake the fish.
- Drain the macaroni and mix it with the flaked fish and thawed peas.
- Melt the margarine in 4 dl of the stock and stir this into the flour mixture. Bring to the boil and cook for 3 minutes then turn the fish and macaroni in the sauce.
- Put the mixture into a greased ovenproof dish and warm through for 15 minutes in the oven, pre-heated to 180º C, before browning under the grill.
Notes
Serve with a green salad or a vegetable such as peas or spinach.
