Ingredients

  • 600 g of salmon
  • 160 g of macaroni
  • 4 dl of fish stock
  • 2 dl of double cream
  • 100 g of frozen peas
  • 60 ml of strong mustard
  • 2.5 ml of ground white pepper
  • 60 g of margarine
  • 40 g of flour
  • Parsley to decorate

Instructions

  1. Put the pepper into the flour and mix this to a smooth paste with the cream and mustard.
  2. Poach the fish in the stock and cook the macaroni in boiling salted water.
  3. Strain the fish, reserving the stock and, when cool, flake the fish.
  4. Drain the macaroni and mix it with the flaked fish and thawed peas.
  5. Melt the margarine in 4 dl of the stock and stir this into the flour mixture. Bring to the boil and cook for 3 minutes then turn the fish and macaroni in the sauce.
  6. Put the mixture into a greased ovenproof dish and warm through for 15 minutes in the oven, pre-heated to 180º C, before browning under the grill.

Notes

Serve with a green salad or a vegetable such as peas or spinach.
